During a wine and cheese tasting, I typically start by introducing the first wine and cheese selection, discussing their respective characteristics, and explaining how they compliment each other. I then encourage guests to take a sip of wine and let it sit on their palate for a few seconds and then take a bite of cheese, allowing the flavors to blend together in their mouths.
